A Sweet Return to the Potato

This holiday season, we are loving all that we are seeing done with the sweet potato. It is a nutrient packed food and very much a favorite of our family diet and a staple food in many parts of the world. Lucky them. 
Especially this time of year in the US, the sturdy root vegetable rich in Vitamin C, beta carotene, iron, calcium and protein is popping up everywhere offering foodies goodness and nutrition all at the same time.

These yummy sweet potato fries were found at the world famous Fuddruckers known for their build your own burger. They have expanded their menu offering healthier fare like veggie and turkey burgers as well as these delectable sweet potato fries. They were cooked to perfection & the entire family feasted with way less guilt. Who knew they could become so mainstream?

Sweet potatoes used to get a bad rap what with their odd shapes and intimidating character. But today with a return to conscious eating, we are seeing copious amount of sweet potato fries in restaurants and cafes all over and though they are fried, they are still a bit healthier than their more popular french fried cousin. It's just another step toward eating the best foods possible and sweet potatoes are at the top of the good food list. We have seen them served like baked potatoes topped with melting marshmallows & butter. We are loving the candied variety topped with pecans or raisins.

They are so ideal for the season and make a perfect dinner side in yam form or as a baked snack treat. Enjoy one during the holidays today. They are warm and sweet and adding a dash of cinnamon sugar mix will be the perfect addition to a simply delicious sweet potato.
